Now is time for your summer garden!
Get a summer garden estimate today. Did you know that you can still have a beautiful garden with tomatoes (high heat), peppers, okra, squash, cucumbers, eggplant, beans, beets, most herbs, salad greens and much more. That’s right, salad greens in the heat of the summer. Urban Backyard Edibles is recommending Purslane, Amaranth, and high heat spinach (New Zealand) to keep those salads coming through July and August.
Here are some informational/fun facts about a couple of the summer greens we are recommending!
Purslane- related to pigweed, has a lemony flavor eaten raw in your salad. It also can be used in soups. Purslane has a high concentration of alpha linolenic acid (an omega 3 fatty acid). It is said to have the highest omega 3 content of any vegetable source. Purslane is also high in Vitamin C and many other antioxidants.
Amaranth- This summer green is also packed with nutrition. It has been eaten in central and south America for centuries. The seed head can be harvested and the grains cooked like quinoa. The greens can be harvested and added to salads before the plant flowers. You can even pop Amaranth seeds for a snack. The grain is high in protein, iron, zinc, copper and magnesium. The leaves are high in Vitamin A, K, B6, C, riboflavin and folate.
